Chicken-Vegetable Soup

Had some tomatoes that were getting old, so i drizzled them with Olive Oil and salt & pepper to coat all of the tomato

350 degrees for approx. half hour or so. Forgot to time it.

Poached two chicken breasts in 1 1/2 cups no fat, low sodium chicken broth

All the Veggies going into the soup. 1 cup of carrots, 2 celery stocks, chopped; 2 cups of chopped cabbage, one small onion, chopped; 1 1/2 cups asparagus, chopped. Make sure everything is chopped into bite size pieces.

Everybody in the pool!!!! Simmer on Medium, Medium-Low for approx. and hour. Added the Roasted Tomatoes and broke them up with a spoon. 

Added poached chicken that I cut up into bite size pieces
