Roasted Garlic and Black Olive Hummus

I cut a 1/4 inch of the top off my head of Garlic and drizzled Olive Oil over it

Wrapped up my Garlic in Aluminum Foil and put it in the oven for 1 hour at 350 degrees

I love Roasted Garlic!

After the Garlic has cooled enough to handle, grab the root end of the Garlic and give it a good squeeze. This will pop the cloves out. Make sure you get them all out!

Drain and Rinse a 15 oz can of Chickpeas/Garbanzo Beans

I cut the whole Olives in half so they don't roll around as I'm trying to fine dice them.

Fine diced Olives.  

I added the Chickpeas/Garbanzo Beans, 2 tablespoons of Olive Oil and 2 tablespoons of Chicken Broth to my little processor. I also added 2 teaspoons Fresh Lime Zest, 1 teaspoon Onion Powder and Salt & Pepper.
If the Hummus is too dry then add more Chicken Broth or Olive Oil.

Last step is to fold in the chopped Olives

MMMMM!!  Doesn't that look good!
Ready for some fresh veggies, Pita Chips or  Naan bread
